Ingredients1½ cups water 1 cup rolled oatmeal 2 tbsp olive oil 2 cloves garlic, minced 2 cups mushrooms, sliced 2 cups fresh spinach washed ½ tsp thyme sea salt to taste black pepper to taste Optional 2 eggs fried fresh thyme sprigs |

Instructions:1. Bring water to a boil in a pot. Pour in oatmeal, reduce heat to a simmer, and cook for 5 minutes uncovered or until oats have reached desired tenderness. Meanwhile pour oil into a saucepan over medium heat and bring to a simmer. 2. Add onion and garlic and sauté for 3 to 5 minutes. Add mushrooms, spinach and thyme and saute until mushrooms turn golden brown, about 5 to 7 minutes. 3. When oatmeal finishes cooking, remove from heat and scoop into pan with vegetables and mix thoroughly. Transfer to serving bowls and add olive oil, salt, and pepper to taste. Add fried egg if doing so and garnish with fresh thyme. |
